Lemon Chicken

300 to 400 grams chicken breast
1/4 teaspoon salt
1 tablespoon soy sauce
1/4 teaspoon paprika powder
1/4 teaspoon black pepper
1 tablespoon cooking wine
1 lightly beaten egg
3 tablespoons cornstarch
2 tablespoons cooking oil
1/4 cup finely chopped onion
2 minced garlic cloves
1 chopped red chili
2 sticks chopped spring onion
1/4 cup water
1 chicken cube
1 tablespoon rice vinegar
1/4 cup lemon juice
1 tablespoon lemon zest
1 tablespoon sugar
pinch of salt
parsley for garnish

Cut chicken breast into big size pieces.

Season chicken with salt, soy sauce, paprika powder, black pepper, cooking wine, beaten egg, and cornstarch. Mix to combine and marinate for 20 minutes.

Heat oil in a pan and fry the marinated chicken for 7 to 8 minutes until golden brown. Transfer out of the oil once done.

In an empty pan, heat cooking oil and add chopped onion. Sauté for about 3 minutes until translucent.

Add minced garlic and sauté for 1 minute until fragrant.

Add chopped red chili and chopped spring onion. Stir in water, chicken cube, rice vinegar, lemon juice, lemon zest, and sugar. Cook for 4 minutes.

Make a slurry with cornstarch and gradually add it to the sauce. Stir and cook for 3 minutes on low heat until satisfied with consistency.

Drizzle the sauce over the fried chicken and toss to coat. Garnish with parsley if desired.
