700g diced lamb
4 washed white potatoes

2 vegetable stock cubes

Chop 4 peeled carrots into chunks using a sharp knife.

Slice the ends off 3 onions, slice in half, peel, and slice into half-moons.

Peel and finely chop 2 garlic cloves.

Chop 4 rashers of rindless back bacon into chunks.

Heat olive oil in a large casserole over medium heat.

Add sliced onion, chopped garlic, chopped carrot, and bacon to the casserole.

Fry these ingredients for 5 minutes over medium heat.

Add 700g of diced lamb to the casserole and fry for 5 to 10 minutes until browned all over.

Chop 4 washed white potatoes into chunks (no need to peel) and add to the pan.

Add leaves from a few stems of fresh thyme to the casserole.

Crumble in 2 vegetable stock cubes.

Pour 1 can of Guinness into the casserole.

Stir the contents of the casserole until everything is combined and covered in Guinness.

If necessary, top the contents with boiling water to cover the ingredients.

Season with salt and pepper if necessary and bring to simmering point.

Place the lid on the casserole and put it in an oven pre-heated to 180c / 350f.

Cook the Irish stew for 1.5 to 2 hours until the meat is tender and has absorbed the Guinness.

Check the consistency and flavor of the stew, and season with salt and pepper if necessary.

Garnish with freshly chopped thyme before serving.
