1 cup celery, diced

4 cups potatoes, diced
2 teaspoons fresh thyme
2 cups lamb stock
2 cups beef stock
2 tablespoons olive oil

Put a glug of oil into your pan.

Add lamb mince and gently fry until browned.

Chop up celery and onions while the meat is browning.

Once the meat is browned, remove it from the heat and place it onto a separate plate.

In the same pan, add chopped celery and onions and gently fry for 5 to 10 minutes until translucent.

Prepare the carrots and potatoes; rinse the potatoes and cut them into bite-sized chunks without rinsing them after cutting.
