1 tablespoon flour
1 bottle stout beer
8 ounces mushrooms, sliced
4 carrots, sliced
6 potatoes, quartered and sliced
1 red onion, chopped
4 celery stalks, chopped
4 cloves garlic, chopped
1 teaspoon fresh thyme
2 cups beef stock
3 bay leaves

Heat a pot over medium-high heat and add 1/4 cup of olive oil.

Brown the chopped stew beef in the pot and remove it once browned.

Add 1 tablespoon of flour and tomato paste to the pot.

Pour in one bottle of stout beer, such as Guinness.

Add the browned beef back into the pot along with 8 ounces of sliced mushrooms, 4 sliced carrots, 6 quartered and sliced potatoes, 1 chopped red onion, 4 chopped celery stalks, 4 chopped cloves of garlic, and 1 teaspoon of fresh thyme.

Mix the ingredients well and add 2 cups of beef stock.

Reduce the heat to low and let it cook for several hours.

After a while, transfer the stew to a larger pot if necessary and add another stout and 3 bay leaves.

Stir occasionally and add more water if needed to keep the broth thick.

After about 8 hours, the stew is ready to serve.
