Activate the yeast by mixing lukewarm milk, sugar, 2 tablespoons of flour, and active dry yeast in a bowl. Let it sit for 10 to 15 minutes until bubbly and foamy.

Sift the all-purpose flour into a mixing bowl and add 1/2 teaspoon of salt, mixing them together.

Pour the activated yeast mixture and whisked eggs into the flour bowl and mix until combined.

Cover the mixture and let it rest for 30 minutes to hydrate.

Spray the working table with canola oil to prevent sticking and start kneading the dough for 5 to 7 minutes, adding flour if it’s too soft.

Add soft butter to the dough and knead for about 15 minutes until the dough is smooth and shiny, passing the window pane test.
