6 cups water
1 tablespoon salt
1 medium onion
3 cloves garlic
2 bay leaves
2 tablespoons olive oil
1 teaspoon black pepper
2 medium carrots
2 stalks celery
1 teaspoon thyme
1 teaspoon cumin
1/2 teaspoon red pepper flakes
2 tablespoons vinegar
1/4 cup parsley

Rinse dried beans under cold water to remove any debris.

Soak beans in a large bowl of water for at least 8 hours or overnight.
