Canned beans save time while split peas are often less expensive.

Avocado oil is healthier while vegetable oil is budget-friendly.
Heat a large pot over medium heat.
Add olive oil and heat until shimmering.
Add chopped onion and sauté until translucent, about 5 minutes.
Add optional garlic and spices; sauté for 30 seconds, stirring frequently to avoid burning.
Add the dried beans, bay leaf, and salt.
Add optional tomatoes, chilies, chipotle peppers, and any other hearty herbs.
Add enough water or broth to cover the beans by approximately 2 inches.
Bring the beans to a boil, then reduce to a simmer and partially cover the pot.
Simmer for 45 to 90 minutes or until the beans are tender, adding more water as needed to keep the beans submerged.
Once cooked, add acid and any additional salt to taste. Sprinkle with optional fresh herbs before serving.
