Ricotta Cookies with Lemon Glaze

Start with room temperature butter and ensure it's really soft.

Add sugar to the butter and blend them together until mixed well.

Pour in 1 egg and mix until combined.

Add fresh ricotta to the mixture and stir well.

Incorporate vanilla and a pinch of salt into the mixture.

Add baking powder and baking soda, then mix.

Gradually add flour while mixing until fully combined.

Form the dough into little balls and place them on a baking sheet.

Preheat the oven to 400°F and bake the cookies.

Bake for 8 minutes, then check; if needed, add 2 more minutes.

Remove cookies from the oven and let them cool on a table.

Prepare the lemon glaze by mixing powdered sugar with juice from 1 lemon until thick.

Dip each cookie into the glaze or spoon it on top for decoration.
