Preheat the oven to 375°F (190°C).
Butter the ramekins and dust with flour, tapping out excess.
In a bowl, whisk together skyr, egg yolks, sugar, and vanilla extract until smooth.
In a separate bowl, beat egg whites and salt until stiff peaks form.
Gently fold the egg whites into the skyr mixture until just combined.
Pour the mixture into the prepared ramekins, filling them about three-quarters full.
Bake in the preheated oven until puffed and golden, about 20-25 minutes.
While soufflés are baking, slice nectarines and toss with brown sugar, lemon juice, and cinnamon.
In a skillet, cook the nectarines over medium heat until caramelized, about 5-7 minutes.
Remove soufflés from the oven and let cool slightly before serving.
Top each soufflé with caramelized nectarines and a dollop of cream.
