Turn on the Ninja Foodi and set it to the medium sauté function.
In a bowl, combine 1/4 cup water, 1/2 cup low sodium soy sauce, 2 tablespoons apple cider vinegar, 1 tablespoon brown sugar, 1 tablespoon granulated sugar, 1 teaspoon ground ginger, and 1 tablespoon minced garlic.
Pour the sauce ingredients into the Ninja Foodi and bring to a simmer until the sugar dissolves.
In a separate bowl, mix 2 tablespoons warm water with 2 tablespoons cornstarch to create a slurry.
Once the sauce is simmering and the sugar is dissolved, add the cornstarch slurry to the sauce and simmer until thickened.
Remove the sauce from the Ninja Foodi and set aside.
Add 1 pound of ground turkey to the Ninja Foodi and brown it until cooked through.
Chop broccoli into fine pieces, adding a whole bunch as desired.
Add a splash of sesame oil to the browned turkey for flavor.
Add the chopped broccoli, tri-color coleslaw mix, and additional matchstick carrots to the turkey in the Ninja Foodi.
Sprinkle in crushed red pepper flakes for spice, if desired.
Pour the sauce over the turkey and vegetables, mixing well.
Cook until the vegetables are soft and reduced down, then serve.
