Kürbis-Flan

Cultural Context

Originating from Mexico, Kürbis-Flan is a delightful variation of the traditional flan, incorporating pumpkin which is abundant in the fall. This dessert is often enjoyed during Day of the Dead celebrations and other festive occasions, symbolizing the harvest season. Today, Kürbis-Flan has gained popularity beyond Mexico, with variations appearing in many Latin American countries and even in fusion cuisine.

1

Cut the top and bottom off the pumpkin to create a stable base.

2

Use a serrated bread knife to cut the pumpkin.

3

Boil one half of the pumpkin for about 15 to 20 minutes.

4

Prepare a baking pudding mold with a lid, or use any ovenproof mold and cover tightly with aluminum foil.

5

In a pan on medium heat, spread 200 grams of sugar evenly and melt it until it turns golden brown, stirring until fully melted.

6

Pour the caramel into the mold, tilting and rotating it to coat the walls, and wear oven gloves as the mold gets very hot.

7

After boiling, place the pumpkin pieces in a blender with 340 milliliters of evaporated milk, 400 milliliters of sweetened condensed milk, and 10 milliliters of vanilla extract.

8

Blend until smooth, then break 5 eggs into a bowl and add them to the blender after about a minute of mixing.

9

Pour the mixture through a fine sieve into the mold and close the lid.

10

Bake in the oven at 180°C (350°F) in a water bath, ensuring the water is hot and covers at least three quarters of the mold without entering it.

11

Check if the flan is ready after one hour by stabbing it with a stick; it should come out dry.

12

Let the flan cool to room temperature, then refrigerate for at least six hours.

13

If the flan sticks to the mold, use a long filleting knife or crepe turner to separate it from the sides.

14

Invert the flan onto a flat plate with a slightly higher rim.
