Lentil Meatballs

Cultural Context

Lentil meatballs, known as Mercimek Köftesi, are a traditional Turkish dish often enjoyed as a healthy appetizer or snack. Made primarily from lentils and bulgur, they offer a nutritious alternative to meatballs and are commonly served at gatherings and celebrations. In Turkey, they are often accompanied by fresh vegetables and drizzled with pomegranate molasses for added flavor. This dish has gained popularity beyond Turkey, embraced for its plant-based ingredients and versatility in various cuisines.

1

Add 1 cup of red lentils into a pot.

2

Pour in about 3 cups of water and turn up the heat to bring it to a boil.

3

Once boiling, reduce the heat to simmer and cook the lentils for about 20 minutes until they break down and reach a soupy consistency.

4

While the lentils are cooking, prepare 4 dried chili peppers by crushing them in a plastic bag.

5

Add the crushed chili peppers to the pot of boiling lentils.

6

Add 2 tablespoons of tomato paste to the lentils.

7

After 20 minutes, check the lentils and add more water if they look too dry.

8

Remove the pot from heat and add 3/4 cup of couscous to the lentils to soak up the remaining water.

9

Add the roasted onion and red bell pepper to the lentil mixture.

10

Chop and add green onions and parsley to the mixture, ensuring the lentils have cooled enough so the parsley doesn't wilt immediately.

11

Serve the lentil mixture on a bed of romaine lettuce and drizzle with lemon juice before eating.
