Cut the Italian bread in half.
Hollow out the top and bottom of the bread.
Coat the inside sides and bottom of the bread with Italian dressing.
Spread olive tapenade evenly on the bottom and up the sides of the bread.
Layer mortadella on the bottom and up the sides of the bread.
Add sliced mozzarella on top of the mortadella.
Layer Capicola on top of the mozzarella.
Add Genoa salami on top of the Capicola.
Spread sun-dried tomato pesto on top of the salami.
Layer sliced provolone on top of the pesto.
Finish with additional layers of vegetables, cold cuts, and cheeses until a mound is formed.
Press the top of the sandwich down firmly.
Wrap the sandwich tightly with Saran Wrap.
Weight the sandwich down with a pie dish and a couple of cans.
Refrigerate the sandwich overnight to compress it.
