Stabilize your grill at 500F and set up for a direct cook.

While the grill is coming to temperature, place your flanken style ribs in a non-reactive container and pour in your marinade. Combine the ribs with the bath and marinate for no shorter than 30 minutes and no longer than 3 hours.

Place the ribs directly on the grill and sear for 3 minutes on each side. Turn to manage caramelization. Feel free to turn and move as they cook. This is generally a dome up cook but feel free to close the dome and smoke with their own drippings.

Remove the grilled ribs from the grill and transfer to a cutting board. Slice between the bones and serve as small bite appetizers right off the grill!
