Peel and slice 2 onions.

Heat a saucepan with 1 tablespoon of olive oil.

Add the sliced onions to the pan and cook for about 10 minutes until soft and translucent.

Add 1 tablespoon of tomato puree and 1 tablespoon of Harissa to the onions and cook for 1 minute.

Add 1 cup of frea to the pan and toast for 2-5 minutes until fragrant.

Pour in 2 cups of stock and cook for 15 minutes, stirring occasionally.

In a bowl, mix 2 tablespoons of honey, 1 tablespoon of Harissa, and 1 tablespoon of olive oil to create a paste.

Rub the paste onto 2 slices of aubergine and cook in a hot pan until golden on both sides.

Slice the halloumi cheese and rub it with the same paste before adding it to the pan.

Cook the halloumi in the hot pan until warmed through and caramelized with honey.

Once the frea is cooked with a slight bite, add spinach to wilt in the heat.

Plate the frea mixture as a base, stack the aubergine and halloumi on top, and finish with a sprinkle of paprika and a dollop of yogurt.
