Blackened Salmon Tacos

12 Corn or flour tortillas
1 1/2 pound Salmon
1 1/2 Tbs Mexican oregano
1 Tbs black pepper
1 Tbs thyme
1 Tbs garlic powder
1 1/2 Tbs Paprika (smoked)
1/2 Tbs guajillo chili powder or your chili powder of choice
1 Tsp salt (Himalayan pink salt) + extra to sprinkle
2 cups chopped cabbage
1/2 chopped red bell pepper
1/2 cup mayonnaise
1/2 pickled chopped + 1 Tbs pickle juice
1 cup corn (cooked)
1/4 cup chopped cilantro
1/4 Tsp salt
1/2 tsp black pepper
1 Tbs Lime juice
1/2 cup sour cream
2 chipotle chilis + 2 Tbs adobo sauce

Preheat a grill or skillet over medium-high heat.

Rub the salmon fillets with blackening seasoning and salt on both sides.

Place the salmon on the grill or skillet and cook for about 4-5 minutes on each side, or until cooked through and blackened.

While the salmon is cooking, warm the corn tortillas on a separate skillet or grill for about 30 seconds on each side.

Once the salmon is cooked, remove it from the heat and let it rest for a minute before flaking it into bite-sized pieces.

To assemble the tacos, place a portion of the flaked salmon on each tortilla.

Top with shredded cabbage, diced tomatoes, and sliced avocado.

Sprinkle with chopped cilantro and a squeeze of lime juice.

Serve with sour cream on the side, if desired.
