Stir in chopped bell peppers and tomatoes; cook until softened, about 5 minutes.
Add scotch bonnet peppers, thyme, bay leaves, and chicken seasoning; mix well.
Carefully add the marinated chicken to the pot, browning on all sides for about 8-10 minutes.
Pour in water to cover the chicken halfway; bring to a simmer.
Cover and cook for 30-40 minutes, turning occasionally, until chicken is cooked through.
Remove the chicken and let it rest briefly before serving.
Serve the chicken with the sauce poured over it, garnished with chopped coriander and parsley.
