1 cup cucumber, diced
1 cup diced tomatoes
1/4 cup fresh parsley, chopped
1/2 cup hummus
1/2 cup tahini
1 tablespoon Dijon mustard
2 tablespoons lemon juice
1 tablespoon maple syrup
1/4 cup water
1 lb store-bought falafel
2 tablespoons sesame seeds
1/2 cup pickles

Set cooked farro aside to cool to room temperature.

In a bowl, combine olive oil, white wine vinegar, salt, and pepper; mix until combined.
