Juice a lime and set aside.

Measure and add 1 oz of lime juice into a shaker.

Add 1 oz of coconut cream to the shaker.

Add 1.5 oz of fresh pineapple juice to the shaker.

Add 1.5 oz of Malibu to the shaker.

Add ice into the shaker and into a glass.

Shake the mixture in the shaker.

Strain the mixture into the glass.

Garnish with pineapple fronds and a pineapple wedge.

For the second cocktail, add half an ounce of lime juice into a blender.

Add 0.75 oz of fresh pineapple juice into the blender.

Add 1 oz of cream of coconut into the blender.

Add 2 dashes of bitters into the blender.

Add 1 oz of white rum into the blender.

Add 1 oz of Malibu into the blender.

Add 1/4 teaspoon of xanthan gum into the blender.

Add 100 g of frozen pineapple into the blender.

Blend until smooth.

Check the consistency of the mixture.

Pour the blended mixture into a poco grande glass.
