The modern keto diet has popularized such alternatives, allowing snack lovers to enjoy familiar flavors without the guilt.

Preheat your oven to 225 degrees Fahrenheit (110 degrees Celsius).
In a small food processor, blend 1 cup of cottage cheese until there are no big curds left, scraping down the sides as necessary.
Add 1 tbsp of heavy whipping cream to the cottage cheese and blend until smooth, right on the edge of fluffy, scraping down the sides as necessary.
Optionally, add 1/8 tsp of seasoning salt and grated Parmesan cheese, adjusting the amount of heavy whipping cream to 1 and 1/2 tsp if using Parmesan.
Using a number 100 disher, portion out the mixture onto a silicone mat, slightly overfilling it to get uniform crackers, yielding about 24 crackers.
Place the tray in the preheated oven and bake for 40 minutes.
Rotate the tray to account for any hot or cold spots and bake for another 40 to 45 minutes until golden around the edges.
Rotate the tray one last time, turn off the oven, and let the crackers continue to bake with residual heat for about 15 minutes.
Remove the crackers from the oven and let them cool for 15 to 30 minutes to continue crisping up.
Store the cooled crackers in a Ziploc bag with a desiccant packet to keep them crisp.
