1 watermelon (about 8 cups)
1/4 cup olive oil
1 tablespoon honey (or to taste)
juice of 1 lime
sea salt (to taste)
2 Persian cucumbers (sliced)
red onions (to taste)
feta cheese (to taste)
fresh mint (optional)

Cut the watermelon in half using a big chef's knife.

Remove the rind from the watermelon by slicing vertically.

Cut the watermelon into half-inch to one-inch thick slices.

Cut the slices into cubes.

Taste the watermelon to determine sweetness for honey adjustment.

In a bowl, combine 1/4 cup olive oil, 1 tablespoon honey, juice of 1 lime, and a pinch of sea salt to make the dressing.
