Watermelon Feta Salad

1 medium watermelon
Crumbled feta cheese as required
2-3 fresh parsley sprigs
5-6 fresh oregano leaves
1½ tbsps extra virgin olive oil
1 tbsp lemon juice
Salt to taste
Crushed black peppercorns to taste
Fresh mint leaves for garnish
8-10 muskmelon pieces
4-5 English cucumber slices
2 tbsps sugar syrup
4 lemon wedges
8-10 fresh mint leaves
Ice cubes as required
Crushed ice as required
1 tbsp cucumber juice
Tonic water as required
Flowers for garnish

Finely chop parsley and oregano leaves.

Scoop out balls of the watermelon with melon scooper. Deseed the watermelon balls.

To make the dressing, take olive oil in a jar, add lemon juice, salt, crushed black peppercorns and chopped parsley and oregano. Cover the jar with a lid and shake till well combined.

Put the watermelon balls in a serving glass, drizzle the dressing on top of each, arrange a few mint leaves, and sprinkle a little feta cheese. Serve immediately.

Add some muskmelon cubes in a cocktail shaker.

Add sugar syrup, lemon wedges, mint and muddle.

Add ice cubes, close the lid and shake well.

Pour in a serving glass, top up with crushed ice, arrange cucumber slices.

Pour cucumber juice, top up with tonic water and serve chilled garnished with flowers.
