Watermelon Feta Salad

half of a watermelon
3/4 cup diced feta cheese
1/4 cup pecans
1 tablespoon red wine vinegar
1 fresh lemon
1 fresh lime
1 tablespoon vegetable oil
fresh mint
chocolate mint

Toast the pecans in a medium-high skillet for about 1-1.5 minutes until they change color, then transfer to a plate to cool.

Slice half of the watermelon into 1/2 inch thick slices, then dice into pieces roughly the same size as the feta cheese.

Dice the feta cheese into pieces roughly the same size as the watermelon.

Chop fresh mint and chocolate mint leaves roughly after washing them.

In a bowl, combine the diced watermelon, feta cheese, and chopped mint.

For the dressing, mix together red wine vinegar, fresh lime juice, fresh lemon juice, a little vegetable oil, and pepper. Do not add salt as the feta is already salty.

Roughly crush the toasted pecans before adding them to the salad.

Mix everything together and serve.
