Dean cooks Watermelon-Cucumber-Feta Salad and Bing Cherry Cobbler in a Cast Iron Pan

This refreshing salad is popular in summer, often served at picnics and barbecues.
Ingredients
- ●4 cups watermelon, cubed
- ●2 cups cucumber, diced
- ●1 cup feta cheese, crumbled
- ●1/4 cup fresh mint leaves, chopped
- ●2 tbsp olive oil
- ●1 tbsp balsamic vinegar
- ●1/2 tsp salt
- ●1/4 tsp black pepper
Instructions
- 1In a large bowl, combine the cubed watermelon and diced cucumber.
- 2Add the crumbled feta cheese to the bowl.
- 3Sprinkle the chopped mint leaves over the salad.
- 4In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
- 5Drizzle the dressing over the salad and gently toss to combine.
- 6Taste and adjust seasoning if necessary.
- 7Serve immediately or chill in the refrigerator for 30 minutes before serving.

- ●1 cup granulated sugar
- ●1/4 cup all-purpose flour
- ●1 tsp vanilla extract
- ●1/2 tsp almond extract
- ●1/2 tsp cinnamon
- ●1/4 tsp salt
- ●1 cup all-purpose flour
- ●1/2 cup unsalted butter, melted
- ●1/2 cup milk
- ●1 tsp baking powder
- ●1/2 tsp baking soda
- ●1/4 tsp salt
- ●1 cup brown sugar
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2In a large bowl, combine the pitted bing cherries, granulated sugar, 1/4 cup flour, vanilla extract, almond extract, cinnamon, and salt. Mix well and set aside to let the cherries release their juices.
- 3In another bowl, whisk together 1 cup flour, baking powder, baking soda, and 1/4 tsp salt.
- 4Add the melted butter and milk to the dry ingredients and stir until just combined.
- 5Pour the cherry mixture into a greased 9x13 inch baking dish.
- 6Drop spoonfuls of the batter over the cherries, spreading it out as evenly as possible.
- 7Sprinkle brown sugar over the top of the batter.
- 8Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the cherries are bubbling.
- 9Remove from the oven and let cool for a few minutes before serving.
