This refreshing salad is popular in summer, often served at picnics and barbecues.

Ingredients

  • 4 cups watermelon, cubed
  • 2 cups cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a large bowl, combine the cubed watermelon and diced cucumber.
  2. 2Add the crumbled feta cheese to the bowl.
  3. 3Sprinkle the chopped mint leaves over the salad.
  4. 4In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
  5. 5Drizzle the dressing over the salad and gently toss to combine.
  6. 6Taste and adjust seasoning if necessary.
  7. 7Serve immediately or chill in the refrigerator for 30 minutes before serving.

  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup brown sugar

Instructions

  1. 1Preheat the oven to 350°F (175°C).
  2. 2In a large bowl, combine the pitted bing cherries, granulated sugar, 1/4 cup flour, vanilla extract, almond extract, cinnamon, and salt. Mix well and set aside to let the cherries release their juices.
  3. 3In another bowl, whisk together 1 cup flour, baking powder, baking soda, and 1/4 tsp salt.
  4. 4Add the melted butter and milk to the dry ingredients and stir until just combined.
  5. 5Pour the cherry mixture into a greased 9x13 inch baking dish.
  6. 6Drop spoonfuls of the batter over the cherries, spreading it out as evenly as possible.
  7. 7Sprinkle brown sugar over the top of the batter.
  8. 8Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the cherries are bubbling.
  9. 9Remove from the oven and let cool for a few minutes before serving.
