Watermelon Feta Salad

3.5 to 4 pounds watermelon
5 Persian cucumbers (about 12 ounces)
4 ounces feta cheese
0.5 shallot
3 tablespoons olive oil
3 tablespoons fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper

Slice half a shallot thin lengthwise into long pieces and place in a measuring cup.

Add 3 tablespoons of olive oil to the shallot in the measuring cup.

Add 3 tablespoons of fresh lemon juice to the measuring cup.

Add 1/8 teaspoon of salt and 1/8 teaspoon of pepper to the measuring cup.

Mix the dressing ingredients together and set aside to let the shallot temper in the dressing.

Prepare the watermelon by lopping off the top and bottom, then peel off the rind.

Cut the watermelon in half, then cut each half into three wedges, and slice it into pieces.

Place the watermelon pieces into a large bowl or on a big platter.

Trim the ends off of about 5 Persian cucumbers and slice them thin on the bias.

Add the cucumber slices to the platter with the watermelon, distributing them throughout.

Drizzle the dressing over the salad, sprinkling it here and there.

Add picked parsley leaves to the salad as a garnish and salad green.

Crumble about 4 ounces of feta cheese over the top of the salad.
