Originating from Taiwan, scallion pancakes are a beloved street food that showcases the use of simple ingredients to create a crispy, flaky texture. Traditionally enjoyed as a snack or appetizer, they are often served with soy sauce or vinegar for dipping. Today, scallion pancakes have gained popularity worldwide, with variations appearing in many Asian cuisines.

Combine all-purpose flour and salt in a bowl.
Gradually add water while mixing until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Divide the dough into equal portions.
Roll out each portion into a thin circle on a floured surface.
Brush the surface with vegetable oil and sprinkle with salt and black pepper.
Evenly distribute chopped scallions over the surface.

Flatten the spiral gently with your palm, then roll it out again into a circle.
Heat a skillet over medium heat and add sesame oil.
Cook each pancake for 2-3 minutes on each side until golden brown and crispy.
Remove from the skillet and drain on paper towels.
Serve warm with dipping sauce.
