Syrian Chicken Fatteh

1.2 kg whole chicken
1 onion, quartered
1 lemon, sliced
1 teaspoon ground black peppercorns
1 cinnamon stick
1 tablespoon salt (season to taste)
3 cups basmati rice
6 cups chicken stock (from poaching chicken)
2 tablespoons oil (one at start, one at end)
2 pieces pita bread, cut into 1cm square pieces
1 tablespoon olive oil
1 teaspoon salt
Tahini yoghurt sauce
½ cup almonds, boiled, de skinned, halved and panfried in butter until brown
Pomegranate seeds for garnish

Poach chicken in water to cover, onion, peppercorns, cinnamon and 2 teaspoons salt (or more to taste).

Shred chicken when cooked. Reserve stock.

Wash rice in lukewarm water, rinse and repeat twice more. Leave in water for at least 5 minutes.

Add 1 tablespoon oil.

Simmer for 10 minutes.

Add remaining 1 tablespoon oil and stir, set aside. Salt to taste.

Toss to coat bread and oil and bake in medium oven, 10 minutes. Watch carefully to make sure it does not burn.

Assemble in the following order: Bread, chicken, rice, yoghurt/tahini sauce, almonds. Add pomegranate seeds if desired.
