🥗Healthier: coconut cream

Coconut cream provides richness while being dairy-free.

1

Start with making the Irish cream sauce by adding 4 egg yolks to a bowl.

2

Add 3/4 cup milk and 3/4 cup heavy cream to the egg yolks.

3

Add sugar to sweeten the mixture.

4

Pour in 2 tablespoons of Bailey's Irish Cream and whisk the mixture together.

5

Cook the mixture over medium heat, stirring constantly in a figure eight pattern to ensure even heating and prevent curdling.

6

Cook for 3 to 4 minutes until it coats the back of the spoon and thickens.

7

Strain the mixture to remove any cooked egg particles.

8

Chill the sauce for a couple of hours to thicken further.

9

For the ice cream, pour the chilled sauce into a pre-chilled ice cream maker and churn for 20 to 30 minutes until ready.

10

In another saucepan, add brown sugar and Schlafly's coffee stout.

11

Stir the mixture and bring it to a boil over high heat, reducing it to half until it thickens into a syrup.

12

Plate the flourless chocolate cake and drizzle the stout syrup over it.

13

Serve with the Irish cream sauce and ice cream on top.
