Add the chopped vegetables (calabacín, berenjena, pimiento verde) and cook until tender.

Stir in the tomate triturado, vino blanco, and agua, and season with salt, pepper, and oregano.

Let the mixture simmer until thickened.

Fill the pimientos del piquillo with the vegetable mixture.

For the coating, mix harina de trigo and huevo for non-vegans, or use harina de garbanzo mixed with water for vegans.

Coat the stuffed pimientos and fry until golden brown.
