Kale Tabbouleh Salad

Avocado oil has a similar flavor profile.
Add 100 grams bulgur wheat to a bowl.
Add spices to the bulgur wheat and mix well.
Pour boiling water over the bulgur wheat until just covered, about half a centimeter above.
Cover the bowl with a plate and let it sit for 10-15 minutes.
In a food processor, add 100 grams kale and 1-2 handfuls of fresh mint and blitz until finely chopped.
Check the bulgur wheat; it should have absorbed all the water. Give it a little mix.
Chop 1/2 cucumber into small cubes and add to the bulgur.
Chop 2 tomatoes into small cubes and add to the mixture.
Slice 5 spring onions and add them to the bowl.
Cut 100 grams feta cheese into small cubes and add to the bowl.
Add the chopped kale and mint to the mixture.
Add the zest of 1 lemon and the juice of 1 lemon to the bowl.
Add 6 tablespoons of extra virgin olive oil, eyeballing the measurement.
Stir the salad with a fork to avoid clagging.
Drizzle a little extra virgin olive oil on top before serving.
