Heat 1 tablespoon of olive oil in a frying pan over medium heat.
Add 1/2 onion, diced, and sauté until lightly golden.
Add 1 clove of crushed garlic and sauté until fragrant.
Add 1 small diced tomato and 1 tablespoon of chopped olives; sauté for about 2 minutes.
Stir in 1/2 teaspoon of smoked paprika and black pepper to taste.
Add 350g of cooked shredded chicken and mix well.
Add 1 teaspoon of sea salt and mix again.
Add 200g of cream cheese and mix until well combined.
In a separate pot, boil water and add 2 teaspoons of sea salt.
Add 700g of cassava (aipim) and cook until tender but firm (al dente).
Drain the cassava and place it in a bowl; mash it with a fork.
Add 2 tablespoons of butter, 1/2 teaspoon of smoked paprika, and 2 tablespoons of chopped cilantro or parsley to the mashed cassava; mix well.
In a frying pan, melt 1/2 tablespoon of butter and spread a portion of the cassava mixture to form a base.
Add the chicken filling on top of the cassava base.
Cover with more cassava mixture to form a lid.
Cook on low heat for about 5 minutes until the bottom is golden.
Carefully flip the dish using a spatula and cook for another 3 minutes until golden on both sides.
Top with additional cheese and optional oregano and tomato slices before serving.
