6 – 8 medium potatoes, sliced thinly
Additional 3 – 4 tablespoons of butter for the casserole

In a sauté pan over medium heat, melt 2 tablespoons of butter. Sauté the onions for 5 minutes. Then add another tablespoon of butter and sauté for another 5 minutes until translucent and lightly browned. Remove to a small bowl and set aside.

While the stock is simmering, slice the potatoes thinly using a 2 mm food processor blade or a mandolin.

Layer the potatoes and onions in the baking dish. Add a layer of sliced potatoes, then a layer of onions, and dot with butter. Repeat for each layer. For the final layer, arrange the potatoes in a decorative fashion.

Pour the infused stock over the layered potatoes and onions. The stock should almost cover the potatoes.

Bake the casserole for 1 hour 15 minutes to 1 hour 30 minutes, until the potatoes are tender, the liquid is absorbed, and the top is golden brown.
