1 cup sugar
1/4 cup water
1 can (14 oz) sweetened condensed milk
1 can (12 oz) evaporated milk
3 large eggs
1 tsp vanilla extract
1 package (3 oz) flavored gelatin (e.g., strawberry or lime)

In a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves and mixture turns golden brown. Pour caramel into a round mold, tilting to coat the bottom evenly.

In a blender, combine sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth.

Dissolve the flavored gelatin in 1 cup of boiling water, stirring until completely dissolved. Add the gelatin mixture to the blender and blend again until well combined.

Pour the milk and gelatin mixture over the caramel in the mold.

Cover the mold with plastic wrap and refrigerate for at least 4 hours or until set.

To unmold, run a knife around the edges of the flan. Invert onto a serving plate, allowing the caramel to flow over the top.

Slice and serve chilled.
