This dish reflects the island's agricultural heritage, showcasing beans as a vital source of protein. Traditionally, it's made with simple ingredients that are easily accessible, making it a beloved comfort food. Today, variations exist across the Caribbean and Latin America, with each culture adding its unique twist.

Add 1 tablespoon of extra virgin olive oil to a mini caldero over medium heat and let it heat up without splattering.
Add beef summer sausage to the pot and let it simmer for about a minute.
Add diced red pimientos, green bell pepper, stuffed Spanish olives, and 1 ounce of frozen sofrito; cover the pot if the sofrito is frozen and let it simmer for about a minute.
Add 1 packet of Goya Sazon with achote and 1 packet of Goya Porr Sazon; mix well.
Add 1/4 cup of tomato sauce, 1/2 teaspoon of white sugar, 1/4 teaspoon of ground cilantro, oregano, and a sprinkle of black pepper; mix everything together.
Add rinsed and washed red beans to the pot along with 2.5 cups of water to cover the ingredients.
Cover the pot and let it simmer for about 15 to 20 minutes on medium low heat.
After 20 minutes, add butternut squash to the pot and cover; let it cook for about 10 more minutes.
Check the beans and squash; they should be tender and the broth thickened up.
Serve with a side of white rice, sweet platanos, and baked chulitas.
