Take leftover rice from the fridge.
Cook bacon until crispy and set aside.
Chop red onion, thyme, rosemary, parsley, and spring onions into very small pieces.
Add half of the leftover rice to a food processor.
Add a splash of water to the food processor to help blend the rice.
Add chopped herbs and a quarter of the red onion to the food processor with the rice.
Blend until combined but not mushy, leaving some rice pieces intact.
In a bowl, combine the blended rice mixture with the remaining half of the rice.
Add around 100 grams of shredded cheese to the mixture.
Add one egg to the mixture and mix until the dough is not sticky and light.
Shape the mixture into balls or canal shapes.
Preheat the oven to 250 degrees Celsius.
Drizzle a little oil over the shaped balls to help them crisp in the oven.
Place the shaped balls on a tray and bake in the oven until golden brown.
