Trim off the edges of bread slices and cut into small cubes.
Heat butter in a small deep non-stick pan. Add bread cubes, mix and cook for 1 minute. Add ½ cup castor sugar, mix and cook till sugar melts.
Add salt and cinnamon powder, mix and cook for 1 minute. Transfer on a baking tray.
Put the baking tray in preheated oven and bake for 10-15 minutes.
Heat milk in another small deep non-stick pan. Add cream, mix and bring the mixture to boil.
Take yolks in a bowl. Add vanilla essence, brown sugar and remaining castor sugar and whisk well.
Add ½ of milk-cream mixture and whisk well. Transfer the mixture into the remaining milk-cream mixture pan and turn on the heat. Whisk and cook till it thickens.
Take cream cheese in a bowl and mix to get a smooth texture. Strain in the prepared milk-cream mixture, mix well and bring down to room temperature.
Blend the milk-cream mixture till smooth. Transfer in an air-tight container, put baked bread cubes on top and cover. Freeze till set.
Serve.
