Mix lukewarm milk and instant yeast in a bowl until foamy, about 5 minutes.
Combine all-purpose flour, sugar, and salt in a large mixing bowl.
Add the yeast mixture and 2 tbs butter to the dry ingredients; mix until a dough forms.
Knead the dough on a floured surface until smooth, about 10 minutes.
Let the dough rise in a warm place until doubled, about 1-2 hours.
Roll out the dough into a rectangle and chill in the refrigerator for 30 minutes.
Soften the remaining 1/2 cup butter and spread it over two-thirds of the dough.
Fold the unbuttered third over the buttered part, then fold the remaining third on top, creating a layered rectangle.
Roll out the dough again and fold it into thirds; repeat this process two more times, chilling between folds.
Roll the dough into a large rectangle and cut into triangles.
Roll each triangle from the base to the tip, forming a crescent shape.
Place on a baking sheet and let rise until puffy, about 1 hour.
Preheat the oven to 400°F (200°C).
Brush with beaten egg and bake until golden brown, about 15-20 minutes.
