Add 2 - 3 tbsp. of olive oil to a pan with a lid and heat to medium-high.

Add 1 tsp. of salt and cover the pan with a lid.

Turn the heat down to medium and let simmer for 10 minutes.

While the tomatoes are cooking, bring pasta water to a boil and season with salt.

Add pasta (3.5 oz. per person) to the boiling water and cook according to package directions.

Stir the tomatoes occasionally to prevent burning.

After 10 minutes, remove the basil and add one ladle of pasta water to the tomatoes.

Crush the tomatoes with a potato masher or fork, adding more pasta water if needed.

Just before the pasta is cooked, add 1/2 cup of parmigiano reggiano cheese to the sauce.

Toss the cooked pasta into the sauce, allowing some pasta water to thin it out.
