🥗Healthier: nutritional yeast

💰Cheaper: grated pecorino

Nutritional yeast adds a cheesy flavor with fewer calories.

1

Add 8 oz of dry pasta into the Instant Pot.

2

Pour in 2 cups of broth, 1 teaspoon of salt, and 2 tablespoons of olive oil.

3

Stir to ensure everything is wet and mostly submerged.

4

If using long pasta, break it in half and layer it in a crisscross pattern, gently pressing it down into the liquid.

5

Lock the lid of the Instant Pot and set the valve to sealing.

6

Press the pressure cook button for the calculated time based on the pasta cooking instructions.

7

Wait for the pot to come to pressure, which takes about 5 to 10 minutes.

8

Once the timer beeps, let the pressure release naturally for 5 minutes.

9

After 5 minutes, perform a quick release of the remaining pressure.

10

Open the lid; if the pasta looks watery, stir it well to combine the liquid into a silky coating.

11

If the pasta is still too liquidy, pop the lid back on (without sealing) and let it sit for 5 to 10 minutes to thicken.

12

To cook the sauce simultaneously, place a short trivet on top of the pasta and set an oven-safe bowl with the sauce on the trivet before sealing the lid.

13

Cook using the same time and method as before for the sauce to heat up.

14

After cooking, let the pressure release naturally for 5 minutes, then quick release the rest.

15

Open the lid to reveal perfectly cooked pasta and warm sauce, then mix together.

16

Sprinkle with parmesan cheese and toss in fresh basil if desired.
