Koupes are a beloved traditional dish from Cyprus, often enjoyed during festive occasions and family gatherings. These savory pastries, filled with a spiced meat mixture, reflect the island's rich culinary heritage, blending influences from both Greek and Middle Eastern cuisines. Today, Koupes are popular not only in Cyprus but also among Cypriot communities worldwide, celebrated for their comforting flavors and satisfying texture.

Prepare the dough with ground wheat, onions, spices, and mix with 2 cups of boiling water and olive oil.
Cover and let it stand to soak for 4 hours.
In a frying pan over low heat, add olive oil and onions, frying until soft and translucent.
Add minced pork and spices, frying until golden brown on medium heat.
Add parsley and cook for a few seconds, then turn off the heat and let it cool completely.
After soaking for 4 hours, knead the dough for about an hour until it resembles a paste.
Roll the dough into a cylinder and make a hole in the center with a wet finger.
Stuff the cylinder with the minced meat, sealing it with a spoon handle and wet fingers if necessary.
Deep fry the stuffed dough in hot oil until golden brown.
