1

Measure out 1 and 3 cups of Ibis all-purpose flour and add a pinch of salt, then combine.

2

Add 220 ml of boiling water to the flour mixture and use a spoon to combine it.

3

Once the mixture cools slightly, knead the dough for about 10 minutes until slightly tacky but not too sticky.

4

If the dough is too sticky, add a little more flour and work it in.

5

Place the kneaded dough back in a bowl, cover it, and allow it to rest for 20 minutes.

6

Rough chop a 2-inch piece of ginger and 5 cloves of garlic, then pound them into a paste using a mortar and pestle.

7

In a mixing bowl, combine the minced chicken with the ginger and garlic paste, 1 tablespoon of green seasoning, 1/2 teaspoon of pie spice powder, 1 teaspoon of MSG, juice from 1 lime, and a pinch of salt.

8

Portion out the rested dough and roll it to form dumpling wrappers, aiming for 16 pieces.

9

Fill each dumpling wrapper with the chicken filling, using your thumb and index finger to pleat and seal them.

10

Heat oil in a pan over medium flame and add the dumplings, cooking until the underside is browned.

11

Once browned, add a little water to the pan, cover it, and allow the dumplings to steam until the water has evaporated.
