Peel the potatoes and remove the eyes.

Julienne cut the potatoes or use any tools to quickly cut them.

Squeeze the water and starch out of the potatoes using your hands or a kitchen towel.

In a bowl, mix the potatoes with 2 tablespoons of melted butter and 1 tablespoon of salt using your hands.

Heat a frying pan over low heat and add 2 tablespoons of butter and 1 tablespoon of oil for each batch of rosti (or 3 tablespoons of oil if you don't have butter).

Once the butter is almost melted, add in the potatoes into a 28cm frying pan, shaping them to a height of around 4 cm without pressing down.

Once the bottom is golden brown, prepare two flat surfaces with handles (using a chopping board).

Slide the rosti onto one surface, add the same amount of butter and oil, place another board on top, and flip it to slide the potatoes back into the pan.

Cook until golden brown and then serve.
