Originating from the Balkans, Bosnian flatbread, known as somun or lepinja, is a staple in many households. Traditionally served with grilled meats or as a sandwich base, it embodies the region's love for simple, hearty foods. In modern times, it's enjoyed across the globe, often adapted to various cuisines, making it a versatile addition to any meal.

Sourdough adds flavor and natural fermentation.
Sift 1 kg of flour into a mixing bowl.
In a bowl, mix 300-350 ml of warm milk with 14 g of instant yeast and let it sit covered for 10 minutes.
After 10 minutes, add 1 tablespoon of sugar and 1 teaspoon of salt to the yeast mixture.
Add 1/2 cup of yogurt to the mixture and stir well.
Gradually add water to the flour while mixing to keep the dough soft.
Knead the dough for about 4-5 minutes until it is sticky but soft.
Grease your hands with oil and fold the dough, then cover it with a cloth and let it rise for 2 hours.
After 2 hours, remove the cover and dust the work surface with flour.
Gently fold the dough and divide it into 8 equal portions, shaping them into balls.
Roll each ball out to a flat round, ensuring it is not too thin or too thick.
Preheat the oven to 250°C (482°F).
Place the rolled flatbreads on a baking tray lined with parchment paper.
Brush the tops of the flatbreads with water and make indentations using your fingers.
Sprinkle sesame seeds on top of the flatbreads.
Bake in the preheated oven for 8-10 minutes until golden and puffed up.
Once baked, cover the flatbreads with a cloth to keep them soft.
