This dish embodies the tradition of using humble ingredients to create comforting, hearty meals. In modern cuisine, braised kale has gained popularity for its health benefits and versatility, often appearing in both home kitchens and upscale restaurants as a nutritious side dish.

Turkey bacon reduces fat while maintaining flavor.

Vegetable broth is lower in calories and can be homemade.
Wash the Tuscan kale and air dry it.
Cut the kale into bite-sized pieces, using the older, less tender parts.
Heat a copper riveted heavy thick pan over high heat.
Add 2 tablespoons of olive oil to the hot pan.
Add whole California garlic to the pan and sauté until cooked.
Add turmeric to the pan along with the chopped kale all at once.
Add a plum tomato into the center of the kale mixture.
Season with pink salt and stir everything together.
Add 2 tablespoons of California Madeira and carefully flame it to burn off the alcohol.
Add 2 tablespoons of water to the pan and cover with a lid.
Cook for about 4 minutes, checking and stirring occasionally to ensure the flavors meld and the liquid reduces.
Plate the Tuscan kale, adding a few pieces of the cooked plum tomato for presentation.
Drizzle finishing olive oil around the plate before serving.
Top the kale with grated Pecorino Romano cheese.
