Dice 1 onion.
Remove the rind from the smoked bacon and dice it finely.
Add lard to the pot and heat it up.
Add the diced bacon to the pot and sauté until it looks excellent.
Add the diced onion and sauté until translucent.
Add the kale and stir well.
Add mustard seeds, allspice, 1 tablespoon of mustard, and nutmeg to the pot.
Pour in some vegetable broth and add the bacon rind for flavor.
Bring the mixture to a boil.
Add the smoked sausage and another splash of vegetable broth.
Cover the pot and let it sit overnight to infuse the flavors.
The next day, bring it back to a boil and adjust seasoning with salt, pepper, and a pinch of sugar.
Add more broth if needed.
Remove the meat and add some oat flakes to the kale.
Prepare fried potatoes while the dish simmers.
Slice the meat before serving.
