Lightly spray cookie sheet with cooking spray.

Roll dough to form a large circle.

Layer the escarole first all over the dough and use a pair of scissors to cut into pieces.

From one edge of dough, start to roll the dough into a log shape, seal the edges & place on cookie sheet in the shape of a U.
