It showcases the versatility of black eyed beans, often served during festive occasions and family gatherings. The dish embodies the rich flavors of the region, combining spices and vegetables to create a hearty meal. Today, variations of this stew can be found in many West African countries, reflecting local ingredients and tastes.

Rinse black eyed beans under running water and discard any debris.
Add the rinsed beans into a pot and pour in enough water to cover the beans.
Add 2 bay leaves and salt to taste.
Cover the pot and bring the beans to a boil, then let them simmer for 15 minutes over medium heat or until tender.
Meanwhile, prepare the tomato stew by blending 3 large tomatoes, 1 bell pepper, 1 onion, and 1 scotch bonnet pepper until roughly blended.
In a separate pot, heat palm oil and fry chopped onions until caramelized.
Add 2 tablespoons of green seasoning blend to the onions.
Add the blended tomato and pepper mix to the pot and sauté for 1 minute.
Add grilled oysters (optional), a stock cube, and turmeric powder to the mixture.
Let the mixture fry for a few minutes, stirring occasionally.
Add the tomato stew to the beans and mix well.
Add smoked crayfish to the pot and allow it to simmer for 10 to 15 minutes.
After simmering, check that the black eyed bean stew is well cooked and ready to be enjoyed.
