Beef Ramen

Heat a cast iron skillet and add a little infused olive oil.

Add 93% lean ground beef to the skillet and brown it until there's no pink.

Peel the carrots and cut them into thirds, then into matchstick-sized pieces.

Chop the green part of the scallions roughly.

Combine the ground beef, matchstick carrots, chopped scallions, and slivers of red bell pepper in a bowl.

In a separate bowl, mix 2 cups of chicken broth, 1/2 cup of low sodium soy sauce, and 2 tablespoons of brown sugar.

Whisk the mixture together and pour it over the beef and vegetables in the bowl.

Mix everything together until well combined.

Transfer the mixture to a slow cooker and cover it with the lid.

Set the slow cooker to low for 4 to 8 hours or high for 2 to 4 hours.
