Cut the tops and bottoms off of 2 average-sized zucchinis and slice them using a slicer.
Place the sliced zucchini in a bowl and set aside.
In a mixing bowl, combine 1 cup of flour with 6 tablespoons of shortening and mix with a spatula.
Gradually add 3 tablespoons of cold water, mixing until the dough comes together.
Form the dough into a ball and roll it out on a floured surface until thin enough to see the design through it.
Transfer the rolled dough to an ungreased tart pan by rolling it onto a rolling pin and unrolling it into the pan.
Spread a thin layer of a mixture of 2 tablespoons of mayonnaise and stone ground mustard on the bottom of the uncooked crust.
Crumble 4 oz of feta cheese over the mayonnaise mixture in the crust.
Layer the sliced zucchini in a circular pattern, overlapping them until the crust is filled.
Sprinkle 1 teaspoon of thyme, black pepper, and salt over the zucchini layer.
Bake the tart in a preheated oven at 375°F for about 30 minutes until done.
Remove the tart from the oven and let it cool for a minute before slicing.
