- ●1 cup shredded cheddar cheese
- ●1 cup scrambled eggs
- ●1/2 cup cooked and crumbled breakfast sausage
- ●1/4 cup diced bell peppers

- ●1/4 tsp salt
- ●2 tbsp olive oil
Instructions
- 1Heat 1 tablespoon of olive oil in a skillet over medium heat.
- 2Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
- 3Add half of the scrambled eggs, sausage, bell peppers, and onions on top of the cheese.
- 4Sprinkle the remaining cheese over the filling and top with another tortilla.
- 5Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
- 6Carefully flip the quesadilla using a spatula and add the remaining olive oil to the skillet.
- 7Cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
- 8Remove from the skillet and let it cool for a minute before cutting into wedges.
- 9Repeat the process with the remaining ingredients to make a second quesadilla.
- 10Serve warm with salsa or sour cream on the side.

Instructions

- 3Grill marinated chicken for 6-8 minutes per side, or until cooked through and juices run clear.
- 4Remove chicken from grill and let rest for 5 minutes before slicing.
- 5In a skillet, sauté diced onion and bell peppers in olive oil until softened, about 5 minutes.
- 6Warm tortillas on the grill or in a skillet until pliable.
- 7Layer sliced chicken, black beans, corn, sautéed vegetables, and cheddar cheese onto each tortilla.
- 8Top with sour cream and fresh cilantro to taste.
- 9Fold in the sides of the tortilla and roll tightly to form burritos.
- 10Place burritos seam-side down on the grill and cook for 2-3 minutes until crispy.
- 11Serve with lime wedges on the side.
